I had to go to Walgreens today. I am taking estrogen patch and it is expensive on my insurance, but Good RX had a coupon I could use at Walgreens for $34. CVS was $39 and Publix where I usually go was $44. Insurance cost is $47. Crazy system in my opinion, but happy for the savings. I also had to stop at the grocery store for Thyme. I didn't bring most of my spices with me as I knew they would be in storage and if they were old already or there was not much left, I pitched the bottle. So it is taking some time to rebuild my spice and herb supply. I needed the thyme for the lamb stew. I was able to get lamb at Costco last week so one boneless leg in the freezer and one for the Lamb Stew I made for dinner. Sliced potato on the bottom, onion layer, cut up boneless leg of lamb layer, onion layer, salt and thyme. I used bone broth instead of regular broth. It was delicious. We had Carrots and grapefruit and honey dew for desert. Chicken soup for lunch with a banana. and brown rice for a mid afternoon snack. I went for a 3.4 mile walk this morning and felt pretty good. Headache is finally gone today but didn't sleep that well last night. Up at 4:00 and couldn't get back to sleep.

Today I had my chicken soup for breakfast along with a banana. Some brown rice as a mid afternoon snack and salmon and beets for dinner. Lots of water.
I went to the farmers market today. They sell a box of veggies or fruit for $10. You drive up and they put it in your car. Cash only. They used to supply all the restaurants and this is how they are staying in business while there is no restaurant business. So now I have so much produce to eat! LOL. Need to find a neighbor to share it with, especially the corn which I cannot eat. I still had a dull headache all day. Coffee withdrawal perhaps. I finally had some Kumbacha at dinnertime. It has a tiny bit of sugar in it but I thought it might help my headache and I didn't want it to go bad. Hoping tomorrow is better. Today is the first day for my experiment with eliminating foods that may be contributing to my ongoing inflammation despite being on methotrexate and now a low dose of prednisone. I really would like to get off both meds and get back to some baseline normal whatever that is.
It was really hard to get up and not have my morning coffee. But I had water and took my pills. My doc has added a probiotic, vitamin B complex and grape seed extract to boost my system. I made a pot of chicken vegetable soup with bone broth, cabbage, onions, celery, carrots and of course chicken. The list says to use free range organic chicken, but I had rotisserie chicken leftovers in the fridge and used that. I am also allowed to have lamb so I will make lamb stew today. We had salad for dinner with tuna. I discovered some of the cans of tuna I have added soy. Who knew? Luckily the Costco brand does not have soy. I had to make my own dressing which was ok, but not as good as the bottled dressing I usually use, so I need to work on that. I also made some brown rice in the instant pot for the first time. It came out really well. I had a headache for much of the day. Coffee withdrawal, low sugar level? I am not really sure. I cut my coffee back to one cup a day all last week. But no coffee at all could have been part of it. Really miss sipping on my morning coffee. I have also been trying to add intermittent fasting into my life. I try to delay breakfast till 10 or 11 and then finish eating by 6:00 at night. Helps rest your digestive organs from having to produce all the enzymes by eating all day. I have a new PCP and she has encouraged me to do an elimination diet in the hope of finding out if there is something triggering the inflammation in my system despite being on immune suppressant drugs. We also talked about the value of intermittent fasting or time restricted eating. I just turned 73 so I am going to give it a try. I ordered the prebiotic and probiotic she suggested as well as the book The Complete Guide to Fasting: Heal Your Body Through Intermittent, Alternate-Day, and Extended Fasting
So this week I am going to wean off of coffee and only have one cup a day. Also cutting out alcohol, flour and sugar. By next Sunday I will be ready to eliminate eggs, beef, dairy, gluten and many other things. I guess fruits and veggies, chicken, fish, and rice will become the staples for the month. Will post my progress as the days pass. A little apprehensive about making such a drastic change but hoping it will jolt my own immune system and all the mitochondria to work better. I think I have good longevity genes but would like to improve the quality of life and mostly my energy level! |
